Mussels have a slightly sweet taste and can be likened to clams or oysters. The flavour of mussels is delicate yet distinctive, with a slight brininess that comes from their exposure to saltwater. They also tend to take on the flavours of whatever they are cooked in, so spices and herbs can make them even more flavourful.

  • 2 TB salted butter
  • 1 cup of White Wine, cooking wine, not sweet
  • 2 Tbsp of Asian Fish Sauce
  • Optional: 5 roma tomatoes, seeded and chopped
  • 2 stalks of Lemongrass, crushed and tossed into broth
  • 2 Tbsp of freshly chopped/peeled ginger root
  • 2 cans, 14 oz each Unsweetened Coconut Milk
  • 6 tsp Thai Red Curry Paste, adjust depending on spice level desired
  • Juice of 2 lime wedges, plus extra wedges for garnish
  • ½ tsp Kosher Salt
  • 3 lb fresh mussels, cleaned and debearded
  • ¼ cup chopped cilantro, plus extra for garnish
  • Optional: Crush and toss in some whole Red Thai chilli's for an extra spice kick
  • Fresh Baguette sliced for dipping

In a large, heavy saucepan over medium high heat, stir together the butter and wine until hot. Add ginger, stirring 1 minute. Add all remaining ingredients except for the mussels.

Whisk to combine the paste and other ingredients well into the coconut milk. Let simmer for 5-10 minutes to allow the flavours to build.

Add mussels and bring liquid to a simmer; cover and simmer about 5 minutes or just until mussels have opened; watch carefully and don't overcook. As soon as mussels have opened up, transfer to a serving dish. Remove Lemongrass stalks and whole Thai chilli's. So that you just have the nice rich Thai broth.

Garnish with extra lime wedges and fresh cilantro. Serve with plenty of rustic bread.
