Pickerel cheeks are amazingly delicious little morsels! They have a nice texture, are somewhat sweet, and practically melt in your mouth when just lightly pan fried, just like a sea scallop.

PICKEREL CHEEKS CAJUN STYLE
INGREDIENTS:
227g pickerel cheeks
2 Tbsp paprika
2 tsp cayenne pepper
2 tsp black pepper
1 Tbsp sea salt
2 tsp onion powder
2 tsp garlic powder
1 tsp dried thyme
1 tsp dried oregano
3/4 cup butter
3/4 cup mayonnaise
1 cup tzatziki sauce (optional)
PREPARATION:
Mix spices together in a low dish like a pie pan and set aside. Place mayonnaise in a low bowl as well. Prepare your frying pan by adding half your butter and melt on medium heat. Coat pickerel cheeks with mayonnaise then stir in spices, coating thoroughly. Place directly into frying pan. Add remaining butter. Use tongs to flip ensuring both sides fry for about 5-7 minutes or meat is thoroughly cooked. Serve with tzatziki sauce.
Tired of traditional cheeks then spice them up. Adjust the amount of cayenne pepper to your desired hot & spicy-ness. Serve as an appetizer.
